Ảnh hưởng của nhiệt độ và thời gian xử lý nhiệt đến chất lượng cau (Areca catechu L.) sấy khô tại tỉnh Đắk Lắk
Tóm tắt
Cau (Areca catechu L.) là cây trồng thương mại quan trọng tại Việt Nam, trong đó cau sấy khô là sản phẩm có giá trị xuất khẩu. Tuy nhiên, quy trình chế biến hiện nay còn phụ thuộc nhiều vào kinh nghiệm, làm cho chất lượng sản phẩm chưa đồng đều. Nghiên cứu này được thực hiện nhằm xác định nhiệt độ và thời gian xử lý nhiệt trong môi trường nước bằng thiết bị kín có gia áp thích hợp để chuẩn hóa công đoạn tiền xử lý trước sấy. Kết quả cho thấy xử lý nhiệt ở 120 °C trong 30 phút cho chất lượng sản phẩm tốt nhất: quả cau sau sấy giữ được hình dạng nguyên vẹn, không ghi nhận biến dạng (0,00%), màu sắc sáng, hệ vân bề mặt hình thành rõ và đạt điểm cảm quan cao nhất trong thí nghiệm nhiệt độ (4,65 điểm). Khi tăng nhiệt độ lên 140 °C và 160 °C, tỉ lệ quả biến dạng tăng lần lượt là 13,85% và 21,07%. Ở thí nghiệm thời gian, xử lý trong 10–20 phút chưa đủ để làm mềm mô vỏ nên vân bề mặt chưa rõ, trong khi xử lý kéo dài 40–50 phút làm tăng tỉ lệ biến dạng, lần lượt là 8,70% và 13,35%, kèm theo hiện tượng rụng đế quả và giảm điểm cảm quan. Kết quả nghiên cứu cung cấp cơ sở kỹ thuật ban đầu cho việc chuẩn hóa quy trình chế biến cau sấy tại tỉnh Đắk Lắk.
